Sweet & Tangy Roasted Pork Tenderloin

A delicous and easy recipe . cumin is the secret. Look up the Mashed Potatoes with Blue Cheese and Parsley recipe for a complimentry potato recipe and a great taste sensation!Yield: 4 three oz. servings
Ingredients:
- 1/4 cup packed brown sugar
- 2 Tbsp cider vinegar
- 1 Tbsp tomato paste
- 1 1/2 tsp chili powder
- 1 tsp ground cumin
- 1/4 tsp black pepper
- 1 pound of pork tenderloin, trimmed
Directions:
Combine first 6 ingredients in a shallow dish, add pork, turning to coat.
Cover and marinate in refrigerator for 1 hour . can be marinated up to 24 hours.
Preheat oven to 450°F.
Remove pork from dish, reserving marinade.
Place pork on a broiler pan coated with cooking spray. Brush with reserve marinade.
Insert a meat thermometer into the thickest portion of pork.
Bake at 450°F for 20 minutes or until thermometer registers 155°F (slightly pink).
Remove from oven, cover and let stand 5 minutes.
