Pumpkin Raisin Loaf
Comment:Makes a great tasting and moist loaf.
- 3 cups all purpose flour
- 1 tsp salt
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 tsp grated nutmeg (equivalent to 2 nutmegs grated)
- 4 eggs
- 1-1/4 cups oil
- 2 cups white sugar
- 2 cups pumpkin puree
- 1 cup raisins
Preheat over to 350° (or have woodstove on at least 1-1/2 hr).
Grease & flour 2 loaf pans.
Mix dry ingredients (flour, salt, baking powder, soda, cinnamon, nutmeg) and set aside.
In a large bowl, mix eggs, oil sugar and pumpkin puree.
Fold dry into wet and mix in raisins.
Pour into loaf pans and bake at 350° for 1 hour (likely longer if using woodstove).
