Southern Pecan Pie
Comment:This recipe came to me on a postcard from someone travelling in the southern United States, so I figure it is pretty authentic.
- 1/4 cup butter
- 1 cup brown sugar
- 1/4 teaspoon salt
- 1 cup dark corn syrup
- 3 eggs beaten
- 1 teaspoon vanilla
- 1/2 cup pecan halves
- 1 9" unbaked pie crust
Cream butter and sugar together until fluffy.
Add next four ingredients.
Sprinkle pecans on bottom of pie shell.
Pour the filling over pecans.
Bake at 450°F for 10 minutes, reduce temperature to 350°F and bake 35 minutes longer.
Outer edge of filling should be set, center slightly soft of until knife inserted in center comes out clean.
