Comment:Makes 1 large or 2 small loaves.
- 1 1/2 cups brown sugar
- 2/3 cup olive oil
- 1 egg
- 1 cup milk, soured with 1 tablespoon vinegar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 1/2 cups fresh rhubarb, diced
- 1/2 cup nuts chopped (optional)
- 1/2 cups brown sugar
- 1 tablespoon butter
Preheat oven to 350°F (180°C).
Mix bread ingredients in order given.
Pour into 1 large or 2 small greased loaf pans.
Mix butter and sugar together to form topping and sprinkle over top of batter.
Bake about 1 hour. Do not over bake.
