Brenda's Empire Cookies

Ingredients - Cookie Dough:
- 3/4 cup shortening
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 2 1/4 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
Ingredients - Filling & Frosting:
- 1/2 cup raspberry jam
- 1 1/2 cups icing sugar, sifted
- 1/4 tsp almond extract
- 1 1/2 to 2 tbsp hot water
- Candied cherries to decorate
Preheat oven to 350 °F (180°C).
In large bowl, cream shortening, sugar, eggs & vanilla with electric mixer on medium speed until light & creamy.
In another bowl, combine flour, baking powder, salt. Add to creamed mixture, beating at low speed until well blended.
(If desired, chill one hour to make rolling easier.) On lightly floured surface, roll dough, a portion at a time, to 1/8 inch thickness. Cut into 2 inch rounds. Place on ungreased cookie sheet and bake 8 to 10 minutes or until lightly browned around edges. Cool completely on wire rack.
Spread half of cookies on underside with jam. Top with remaining cookies to make a sandwich.
In small bowl, combine icing sugar, almond extract and enough hot water to make a thin icing. Frost top of cookies. Decorate with a small piece of candied cherry.
